Chicken Soup
How can I Make Chicken Soup from my left over chicken?
I just made an oven stuffer chicken, I have most of the chicken drippings and some chicken left.... how can i turn this into soup?
Dice the chicken, and add it and the defatted drippings to a large carton of chicken broth. (Or make your own by adding 3 or 4 chicken bouillon cubes to three cups of water.)
Simmer the chicken and broth with a couple of peeled and sliced carrots, two stalks of celery, a peeled and diced potatom and a small diced onion until the veggies are tender. Season to taste with salt, pepper, garlic powder, and poultry seasoning.
You can cook noodles in the broth or add some cooked rice, as well. I suggest cooking the rice separately so that it doesn't absorb all the broth.
